Grandma Lily’s Shortbread Scottie Dogs!

INGREDIENTS:

  1. 2 Cups all purpose flour.
  2. 1 Cup or two sticks of butter
  3. 1/2 cup sugar
  4. 1/3 tsp of ground ginger
  5. 1/2 teaspoon vanilla essence
  6. Scottie Dog Cookie Cutter
  7. Parchment Paper
  8. Cookie Tray
  9. Cooling Tray
  10. Rolling Pin
  11. Spatula

METHOD:

  1. Heat oven to 350 degrees
  2. Mix sugar and butter together in mixing bowl, until it forms a creamy paste.
  3. Add flour, ginger and vanilla
  4. Knead together with your hands until all ingredients are used up to form a ball.
  5. Sprinkle a little flour on the surface where you are going to roll out the cookie mixture
  6. Roll out the mixture until it’s about 1/2 thick. Cut our your cookies with the cutter.
  7. Place them on the parchment paper on the cookie tray. Leave a little space between them
  8. Bake for 20 minutes.
  9. Wait until cookies are completely cooled. At this point you can melt some chocolate and dip the cookies in or pour over the top, if not, using green icing, draw a stripe across the neck of the Scottie Dog. Then take a toothpick and drag over the stripe lightly on each side to create the look of Holly.
  10. Using the red icing packet, draw three dots on in the middle of the holly collar. Wait until completely dry and VOILA!
